Nutrition

Contain a significant amount of copper, this helps the body to produce red blood cells and drives a variety of chemical reactions which are key to human health. They also contain potassium which can help with heart rhythm, fluid balance, muscle and nerve function.

Preparation and cooking

It is rarely necessary to peel a mushroom unless of the field variety. Otherwise wipe the mushrooms, don’t wash. Slice or chop, quarter or use whole. Sauté, grill or roast, shop finely and add to stuffing, stuff large mushrooms with a mixture of herbs and breadcrumbs and bake. They are sometimes used as a substitute for meat in vegetarian dishes and are a great addition to any dish.
