Contains vitamins A and C, calcium, folate and potassium. Like all cabbages it is said to stimulate the immune system and have cancer fighting properties.
Remove any tough outer leaves and cut the leaves free of the core. Slice out any tough central stalks. Rinse, chop or slice. Can be boiled, steamed or fried. Try this, fry onion, bacon and herbs, add chopped cavolo nero and seasoning, cover the pan and cook very gently for about 20 mins. Or shred the leaves and add to substantial vegetable and bean soups, Tuscan style.
