Rich in minerals, iron, potassium, magnesium, copper and calcium, vitamins A, C and folate. Considered by some to have healing properties, also a tonic and antiseptic.
Remove outer leaves, make one cut down the middle, fan out the leaves and wash under cold running water. Slice across into fairly thin slices. Boil in a very little water or steam, drain and season, serve with a little butter or nice oil. Can be roasted, cut in half, seasoned and drizzled with oil. Leeks are an essential ingredient in many dishes such as soups, quiche, pies, and casseroles.
